Mushrooms and Kale saute


Hey Whiskers,
Well, I've been feeling a bit under the weather lately and been craving some really delicious and healthy foods to clear me up inside. This easy sauteed mushrooms and kale is great with a side of proteins, or with something I'm whipping up right now like lentils and rice. This is a healthy and delicious way to eat greens. It's super simple and something you can whip up in 20 minutes for an easy lunch or dinner side. Our family is a huge fan of mushrooms so we always have a few boxes of fresh mushrooms around, this recipe really needs to be made with fresh mushrooms so please don't substitute for dried or canned mushrooms, you will be disappointed. You can substitute the butter for margarine or olive oil, we had it with a dairy meal so I decided to splurge. Well then off to the super simple and delicious recipe.


Ingredients:
  • 2 tablespoons extra-virgin olive oil, 2 turns of the pan
  • 2 tablespoons butter, cut into small pieces
  • 4 cloves garlic, chopped
  • 1 white onion
  • 24 small crimini mushrooms, wiped clean, halved
  • 1 bunch kale, trimmed, stems removed and chopped
  • 1/4 cup Marsala or other sherry
  • Salt and pepper
How To:

  • Soak the kale, then separate the leaves from stalks and chop stalks.
  • Chop garlic, onion and kale stalks, saute in the pan with half the butter.
  • Wash and slice the mushrooms thinly, add to pan when onions are translucent.
  • Add the kale leaves and rest of butter, saute then add rest of ingredients and steam for 10 minutes till desired consistency.
