Honey yogurt quick bread


Hey Whiskers! 
So summer gives me a lot of time to experiment and try new recipes, with lots of recipe testers home. I have wanted to get more into the breads, be it quick breads that don't require time to rise, like this delicious bread. It took me a mere 10 minutes to get all the ingredients mixed and ready for the pan. Now I poured all the dough into one pyrex loaf pan-it took a very long time to cook.( Our sense of time may have been skewed due to the fact it was before a fast and we really wanted to eat it.) I would recommend either splitting the dough or preparing to wait a while. Our whole family really enjoyed this recipe plain or adding butter or honey to the delicious warm bread. Ingredients
  • 1 cup Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 3 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 teaspoon Cardamom
  • 4 Tablespoons Unsalted Butter, melted
  • 1 cup  Yogurt
  • 1 whole Egg
  • 4 Tablespoons Honey
  • 1 teaspoon Vanilla Extract


How To:


  1. Preheat the oven to 350 F and coat a standard 9×5-inch loaf pan with non-stick spray.
  2.  In a large bowl, combine flours, baking powder, salt and cardamom together. Set aside.
  3. In another bowl, cream together melted butter and k yogurt. Whisk in egg. Stir in honey, then stir in the vanilla extract. 
  4. Add the wet ingredients into the dry and mix until combined.
  5. Pour batter into the loaf pan and bake for 35-45 minutes, testing near the end with a toothpick, until it comes out clean.
