Easy,Moist Chocolate cake
Hey Whiskers,
I'm back with a super simple easy dessert this time. Chocolate cake,now who doesn't like a good easy chocolate cake. Now I'm not a huge fan of frosting ( I know I'm crazy) so I made an easy chocolate glaze to pour over. I love this recipe as its super simple and can even be made in the cake tin,Crazy right?? I made it in a bundt pan and it was no mess and super simple. The glaze is just three ingredients-- now if I were you I would make it four and add some instant coffee,my family just has issues with coffee so I can't add it to my baking.This is a fun recipe to make with kids as they can make the wells in the dry ingredients and then help you mix. This recipe comes from WW2 when they had shortages in butter and the like so they had to make do with whatever they were rationed.I happen to love these types of recipes as they taste delicious and give you a sense of what they were given in US kitchens. Ingredients
Cake
- 4 1/2 cups (188 g) all-purpose flour
- 9 tablespoons (45 mL) cocoa (unsweetened)
- 3 cup (200 g) white sugar
- 3 teaspoon baking soda
- 1 1/2 teaspoon salt
- 3 teaspoon white vinegar
- 3 teaspoon pure vanilla extract
- 15 Tablespoons (75 mL) vegetable oil
- 3 cup (240 mL) water
Glaze
- 1 cup powdered sugar
- 1/4 cup cocoa powder
- About 4 tablespoons soy milk or any liquid you want
How To:
- Preheat oven to 350 degrees F (180 C).
- Mix the first 5 dry ingredients in a greased 8" (20 cm) square baking pan.
- Make 3 depressions in the dry ingredients - two small, one larger.
- Pour vinegar in one small depression, vanilla in the other, and the vegetable oil in the third larger depression. Pour water over all. Mix well until smooth. (Yes, all this right in the baking dish!)
- Bake on the middle rack of the oven for 35 minutes. Check with toothpick to make sure it comes out clean. Cool.
- While cake is cooling mix the powdered sugar,cocoa and soy milk till you create consistency you like to work with
- Drizzle or cover cake completely as you like,serve.
