Spring Pasta Salad

So Passover is over, and life is back to its crazy routine. The first recipe I wanted to share though was this absolutely fresh, a burst of spring sunshine in your mouth type recipe. Yea I went there, this is a great way to get our carb fix that we're all craving, yet still get in some fresh spring greens and some protein. This recipe is a simple easy and delicious full meal on its own. I made up this recipe for my close friend's bridal shower and all the girls loved it. Give this fresh spring pasta salad a go, let me know how it tastes. I wrote the recipe up in grams this time as that was the measuring tool I used since I was just having the bags or using full bags of products.I'm sorry if its more annoying, but most containers of ingredients have the grams on them for you to check.

Ingredients
Salad
- 900 grams spaghetti
- 200 grams spinach leaves
- Zest of two lemons
- 400 grams bulgarit cheese (or any hard crumbly cheese like feta)
- 400 grams green peas ( I used frozen so I blanched them for 2/3 minutes till soft)
- 200 grams (about 2 handfuls) cherry tomatoes, halved
Dressing
- Juice of the two lemons
- olive oil
- 3 tablespoons basil ( I used frozen cubes)
- 1 tablespoon garlic ( I used frozen cube)
- Pepper to taste
How To
- Set a pot of water to boil for the pasta, which you will use for the peas after as well.
- Zest the two lemons and set to the side.
- Juice the lemons and combine with the rest of dressing ingredients.Set to the side.
- Wash the cherry tomatoes and halve, combine with spinach in large bowl.
- Cook pasta as per instructions, I would recommend leaving it al dente so it doesn't get soggy.
- Cube the bulgarit cheese into small cubes, combine with rest of salad.
- Drain the pasta and toss with a little bit of olive oil, set in cold bowls to cool slightly
- Combine the pasta and toss with rest of salad and dressing.
Enjoy the carbs with the freshness of the spring, don't forget to share with family and friends.
