Oven roasted Cod

So fish is a big thing at our house as a healthy protien, as well as always serving fish on Shabbat. So being me I love to find constant new recipes. This fish was actually a mystery fish for a while as Israel likes to use the latin name. So after a bunch of research, we figured out is was Cod of some sort. So this recipe is a fresh easy recipe. Make sure to check the fish in the oven and not to overcook the fillets as its very easy to overcook. This is great with salads or if you want to make it a full meal it could be delicious with pasta or rice. Enjoy let me know how it tastes. Makes sure to share with your friends. Ingredients
- 1 1/2 cups plain bread crumbs
- 1 handful fresh flat-leaf parsley
- 2 large cloves garlic
- 1 lemon, zested
- Coarse salt
- 4 (6 to 8-ounce) cod fillets
- Extra-virgin olive oil
Directions
- Preheat oven to 400 degrees F.
- Place breadcrumbs in a shallow dish. Pile parsley, garlic, lemon zest, and a little coarse salt on the cutting board. Finely chop the lemon-garlic mixture, then combine with plain bread crumbs.
- Brush the top of each fillet with olive oil and dip into the bread crumb herb mixture. Brush a little bit of olive oil in the bottom of a baking pan then place fillet in the pan, crust side up.
- Roast fillets in the oven until firm to the touch, about 12 to 15 minutes.
