Guinness Beer stewed Beef
Whiskers! I'm back. Lol. So I realized that I haven't posted any beef recipes. That's not so surprising as beef is more expensive than chicken, so we don't cook it so often. So why beef? Well, my princess of a little sister refuses to eat chicken. So when she comes home from the dorm for the Shabat then we try and make her beef. This recipe is quite awesome as it requires no oven and one pan. Its cooked completely in the dutch oven on the stove. Please don't freak about the Guinness as someone who doesn't drink any alcohol as well, it all gets cooked off in the stewing. Feel free to add other root vegetables this is what we had on hand and what I thought my family would enjoy. We even kept it on the hot plate for a few hours till we ate it Friday night absolutely delicious with no leftovers.Try it and let me know. * 3-4 pounds beef chuck roast, cut into 1-inch chunks

* 3-4 pounds beef chuck roast, cut into 1-inch chunks
* Salt and pepper
* 3 tablespoons olive oil
* 2 onions, chopped
* 2 cloves garlic, chopped
* 2 cloves garlic, chopped
* 2 tablespoons tomato paste
* ¼ cup flour
* 1¼ cups Guinness Draught
* 2 tablespoons brown sugar
* 1½ pounds Yukon Gold potatoes, cut into 1-inch pieces
* 2 Sweet Potatoes
How To:
- Season beef with salt and pepper. Heat oil in Dutch oven over medium-high heat and add onions. Stir until they are starting to brown, add garlic halfway about 5 minutes.
- Add tomato paste and stir until well-combined. Stir in flour, and then whisk in ¾ cup Guinness, and sugar. Simmer for 3 minutes.
- Add beef and stir. Add potatoes and sweet potatoes to the pot, stir and continue cooking until the meat and veggies are tender about 60-90 minutes.
- Add remaining Guinness, stir and add salt and pepper as needed.
