Cucumber & Carrot Salad

Long time no speak! Sorry about that I am taking the equivalent of the SATs in Israel next week, so I've been quite busy studying over the past few months. On top of that Passover is coming, so my family is doing spring cleaning and calling it Passover cleaning. This is a great recipe for summertime as its simple, and the textures harmonize with the balance of sweet, salty, and spicy. Its a fast simple delicious burst of summer. Summer Cucumber and Carrot Salad

Summer Cucumber and Carrot Salad
Ingredients:
- 3-4 Cucumbers (I used the ones we have in Israel which are smaller and have fewer seeds)
- 2 small Carrots
- 2 Green Onions
- 1/4 cup Crushed Peanuts
- 1/3 cup Rice Vinegar
- 1 tsp Sesame Oil
- 2 tsp Lime Juice
- 1 tbsp Honey
- 1 tsp sriracha sauce (less if you're not up to the heat)
Instructions:
- Slice the cucumbers into strips. Cut the carrots into thin julienne strips. Thinly slice the green onions.
- Mix the dressing ingredients (Vinegar, Oil, Lime juice, Honey, Sriracha) together in a small bowl, and whisk until well combined.
- Add the chopped vegetables to a large salad bowl. (Save some green onions and peanuts for garnish.) Pour the dressing over top and toss to combine.
- Garnish with extra chopped peanuts and green onions. serve immediately
