Rosemary Garlic Lamb Shoulder

So I found this amazing meat company that is homegrown organic meat. They have all different types of meat including duck, goat, lamb, all pieces of beef and of course chicken. So this recipe is a simple rub for the lamb shoulder we grilled. This was a simple rub to let the meat speak for itself. It was a super fast and easy way to get lots of flavor. Ingredients:
- 2 tablespoons crushed garlic
- 1/4 cup rosemary leaves
- lamb shoulder in 8 pieces about 1.2 kilo
- 2 teaspoons salt
- 1 tablespoon pepper
- Olive oil to coat
How To:
- Rinse the lamb and pat dry, setting on a sheet pan.
- Soak, rinse and chop the rosemary.
- Combine the salt rosemary garlic and pepper.
- Mix well and add a bit of olive oil to create a paste
- Pat the meat again removing the moisture before coating each piece well.
- Let sit at least two hours to infuse with flavor
- Sear on high heat then moving the meat to the side the of grill to slow cook till just cooked through about 15/20 minutes depending on how well cooked you like your meat.
