Mustard chicken nuggets

Well Hello there Whiskers,
Life has gotten so very crazy these last few weeks,but then again when is it not?? So as an aspiring athlete as well as someone who is trying to loose weight in a healthy way,I am always looking for healthy different ways to make chicken breasts interesting. Now this recipe is actually an adaptions of my moms experiment--Shout out to my mom for always just being there and being all around awesome. So I being the flavor geek messed around a bit to change the flavor balance slightly. These were delicious my brother and I sat and ate them straight off the pan,while they were piping hot. Give this simple one bowl recipe a go and let me know how it tastes. 

Ingredients:

  • 1 k"g chicken breasts cut into bite size pieces
  • 1/2 cup yellow mustard--(I used plain French's I want to try them with whole grain)
  • 1/2 cup honey 
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1 teaspoon onion powder
  • Salt and pepper to taste
How To:
  1. Preheat the oven to 375 degrees Fahrenheit
  2. Rinse off the chicken breasts and cut into nugget sized pieces ,place in bowl 
  3. Mix all the rest of the ingredients in a separate bowl till well combined.
  4. Pour the marinade over the chicken,mix well and rest up to an hour.
  5. Pour the chicken into a shallow pan and cover with parchment paper to keep moist
  6. Cook in oven for about 15 minutes until cooked through
My brother and I literally sat and inhaled the pan with just some more mustard on the side.These are great for a party (hint hint,you know the Super-bowl coming up?!?!) But also as just a healthy lunch or dinner . I didn't have any sides as I didn't need any more carbs or anything but would make a great meal with couscous or rice. You won't have any leftovers .
