Fast,easy,healthy lentils and rice

Hey Whiskers,
So I've gotten started training again with a personal trainer to help me with my balance as well as rowing and tennis,so Ive started up my healthy eating and cooking as well. I made this lentils and rice dish its incredibly easy and doesnt require and meat protiens so its great for vegetarians as well.Its incredibly easy ,while there are a few steps ,you will have all your ingrediants in your cabinets.

Cook time: 72 minutes
Serves 4-6

Ingredients:

  • 1 cup small brown lentils,rinsed
  • 1 cup long grain rice (i used brown rice)
  • 4 cups water, divided 
  • 1/4 cup canola oil
  • 2 large yellow onions,diced(4 cups)
  • 4 cloves of garlic
  • 1 teaspoon kosher salt,more to taste
  • 1 tablespoon olive oil
  • 1-2 tablespoons pepper add to taste
Feel free to add any other spices to the basic flavors i loved the sweetness from the fried onions and didnt want to make it to complicated.Here's how to.

How To:
1. Place the lentils in a small saucepan with 2 cups of wate.Bring the water to a boil over high heat,then reduce the hear and simmer,until lentils are parboiled.(10-12 minutes.)Drain the lentils and set aside
2. In a large saute pan with a lid (i used a low pot similar to a paella dish),heat the oil over medium heat.Add the diced onions and cook until the onions are dark golden brown.Sprinkle with salt while cooking.
3.Pour the remaining 2 cups of water,bring the water to boil over high heat,then reude to low and simmer for 2 minutes.Stir in the rice and par-cooked lentils into the onion mixture.Cover and bring back to a boil stir in salt and pepper to taste.Reduce the heat to low,cover and cook until the lentils and rice are cooked through.(you might need more water).
I let the dish cool and portioned for the week it tasted amazing warm,cold and room temperature.Im not sure how long it keeps in the fridge it didnt last longer than a week in my house.
