Spaghetti Squash Fritters
So while Ive been living at home again now my mom has being trying in her own way to help make the house have healthy food so she bought a spaghetti squash.It sat in the vegetable basket for a while until I saw it and started doing some research for recipes to base off of to create my own recipe. Now this recipe is semi based off of what I saw online and my love for spice-which has to be tempered slightly as my family doesn't have the greatest tolerance for spice.
Spaghetti Squash Fritters
Ingredients
1 medium spaghetti squash (roasted in the oven at 375 till soft and able to pull apart)
2 eggs
1/2 cup (200 grams) feta
1/2 -1 teaspoon harisa (feel free to add more not very spicy)
1/2-1 teaspoon preserved lemons (plenty,just gives a nice bitter-sour note)
1/4 cup grated manchego cheese
Salt and pepper to taste
oil to fry
How To
1. Cut the spaghetti squash in half and scoop out all the seeds
2. Brush with olive oil and salt and pepper
3.Bake in oven set at 375 for about 40 min till stringy and soft to the touch
4. Let cool enough to pull out the strings with a fork
5.Put in large bowl
6. Add all the rest of ingredients
7.Mix well
8. Heat up frying pan pour oil in
9. Shape into patties whatever size you prefer
10.Fry for 2-3 minutes making sure its browned well on each side.
My parents loved the recipe and I added a bit more harisa when I ate one. I saved the rest in an airtight container in the fridge and took it for an early dinner after wheelchair tennis practice and they were great-light full of flavor and nutrients.
