Sweet Potato Stacks

Long time no speak. I've been pretty busy studying but this delicious and healthy sweet potato snack is great for long study sessions. The most time-consuming part of this dish is peeling and slicing the sweet potatoes, so if you have a mandolin or a child who is looking to work on their knife cuts, you can oversee them while preparing the flavored butter. The flavored butter is simple but balances out the innate sweetness of the sweet potato, without overriding the beautiful vegetable. You can eat this on its own or as a side to any meal, with fish, or most anything. Enjoy the recipe, and until next time keep whisking up love and happiness to those around you

Ingredients:
- 3 tablespoons of melted butter
- 2 tablespoons of garlic
- 4 sweet potatoes
- 2 teaspoons rosemary
- 1 teaspoon onion powder
- 1 teaspoon paprika
- parmesan cheese for the tops
How To:
- Preheat the oven to 375 degrees.
- Peel, rinse and slice the sweet potatoes into 1/8 inch rounds
- Melt the butter and combine all the spices except the parmesan
- Toss the sweet potatoes in the mixture, till well coated.
- Spray muffin tins and then stack sweet potatoes till full.
- Top each stack with parmesan.
- Cook for 35-40 minutes, remove when the top is crispy and a fork pierces through.
- Serve with any main dish or as a delightful snack.
